Expertise Description

With more than 35 years' experience in the field of food safety, I have an expertise in microbiology; cheese manufacture and milk ultrafiltration that impacts the microbiological safety of dairy products; and optimizing starter culture fermentations; accelerated cheese ripening; and ultrafiltration technology. I have additional knowledge in butter microbiology, methods for detection of enteric bacteria (salmonella) and Listeria monocytogenes, the heat resistance of pathogens, the role of airborne microbes to food, and food factory environmental contamination. I have over provided consultations and deposition for over two decades as a food safety expert witness.
