Expertise Description

I have over 55 years experience in Food Science with expertise in manufacturing, industrial and chemical engineering; industrial and restaurant fryers; deep fat frying; high-temperature steam for frozen food manufacturing; and industrial frying oils. I have additional knowledge in process/product development, regulatory clearances, field installation, marketing, patents, materials science, personal care, consumer products, packaging, lipid technology, stability, quality assurance, and laboratory management fields . I have provided numerous clients with consultations, deposition, and courtroom testimony for more than 20 years as a food science expert witness.

Professional Experiences

I have directly applicable knowledge in both mechanically caused and frying fat and food related incidents developed in over 50 years hands-on experience in such matters. My background covers production scale to restaurant to laboratory beaker scale work. I am especially known for restaurant scale work having been a consultant to Pitco-Frialator and Fry-Master, with operations in many of the “fast food” chains and high end restaurants as well. I have worked in design, fabrication, oil management, and many other roles as a scientist, engineering manager, university teacher, and current owner/operator of a consulting/forensics industrial laboratory for almost 40 years. Numerous publications and patents deal specifically with frying, fryers, and cooking oils, testers, and treatments.

I have credentials in forensics, and testimony/depositions/reports for more than twenty years on a sporadic, rather than career-driven occupation. During my career I have been called upon to adapt and fix many types of production and restaurant equipment using my machining and other skills when leading installation and remediating teams in the field. I have experience with the public, with students, with exceptional individuals, government officials, and with attorney requirements.
