Expertise DescriptionI have more than 25 years experience in the field of Nutrition and Diet with knowledge in nutritional assessments and developmentally disabled individual care plans, evaluation of food service departments and maintaining industry standards, kitchen inspections, and development of protocols for assessing Quality Assurance. I have additional expertise in classes on food safety, food preparation, general nutrition education, nutritional counseling, weight loss, diabetes, and therapeutic diets. I have prior expert witness experience with consultations, depositions, and courtroom testimony.

Consulting experience includes completing nutritional assessments and individual care plans, developing therapeutic and regular menus and recipes, as well as developing websites for businesses. Additional experience includes evaluating food service departments and assisting in meeting and maintaing industry standards, providing detailed kitchen inspections and audits, and developing protocols for assessing Quality Assurance.
Professional experience includes being a Consultant Registered Dietitian, Instructor of food science and nutrition courses, Food Safety Auditor, Diet Technician, and Food Production Manager.
I am an experienced food service safety inspector for many chains of restaurants in Southern California. I am also a food safety and principles of food preparation instructor at Orange Coast College. I understand food preparation principles and am an expert in food safety.
